Traditional Panko requires yeast fermentation, dough proofing, baking in specialized electric resistance ovens, and long cooling cycles, taking 12–24 hours. Zhuoheng’s turnkey twin-screw extrusion process completely eliminates proofing and baking. By utilizing precise Specific Mechanical Energy (SME) inputs under controlled thermophysical parameters, the starch gelatinizes instantly inside our barrel, forming a dense, uniform cellular structure in only 30 seconds.
Controlling final crumb geometry is achieved through two variables: the moisture profile at the extruder die and the speed of our Specialized Wet-Milling Crusher. By adjusting the water injection rate inside the barrel, we control the density of the extruded loaf. Combined with VFD-controlled cutter speeds and specific screen mesh sizes, operators can switch from Japanese needle-shaped Panko to Western granular crumbs.
High-volume flour extrusion causes severe abrasive wear. We manufacture our screws from premium 38CrMoAl alloy steel treated with a deep nitrogen gas nitriding process, achieving a surface hardness of ≥HV850 and a case depth of 0.5–0.8mm. The wet-milling crusher blades are forged from high-impact Cr-Mo-V wear steel, ensuring over 6,000 continuous hours of maintenance-free operation.v
Yes. Colors (such as vibrant beta-carotene orange, turmeric yellow, or spinach green) are introduced as liquid concentrates or powder pigments directly into our twin-shaft mixer before extrusion. The high-shear action of the co-rotating twin screws ensures complete, molecular-level dispersion within the starch matrix, preventing color or flavor leaching during the downstream wet-milling and drying steps.
Freshly crushed Panko flakes are fragile and have a high moisture content of 20%-25%. Flash dryers use violent pneumatic cyclones that destroy the delicate needle-like structure, turning Panko into powder. Our multi-layer belt dryers slowly convey the wet flakes on a stainless steel mesh bed. Hot air recirculates gently through the product layers, preserving the needle shape and reducing moisture to <8% with zero mechanical degradation.
